Chickpea Curry


2 Tbs coconut oil

One onion

3 cloves of Garlic

1 red pepper

2 tsp curry powder

3 Tbsp fresh (or dried) Dill

1/4 C Salsa or tomato Sauce

A can of coconut cream

Salt & Pepper


Place the coconut oil in a large sauce pan and heat. Dice up your onion and garlic, add into the pan. Saute. Wash and slice your red pepper and add as well. Add in your curry powder, salt and pepper. Wash and chop your dill and add with the tomato sauce/salsa (if you want a little spicy hit). Allow all the veggies to simmer until the liquid cooks down some more. In about 7-10 min add in your coconut cream. Continue simmering. We want all the flavors to blend together. Delicious! When your curry has reached its desired texture (add water if needed) you are ready to serve it up! Here I had my curry on whole brown rice. I also recommend adding it to your favorite burrito or dipping in homemade chips :) Enjoy!
