A head of Lettuce
1 Yellow pepper
3 tomatoes
Handful of Cashews
Pumpkin seeds
Pine Nuts
Chia seeds
Sun-dried tomatoes
Dressing:
1/2 C Tehina
1 tsp Gram masala
1 tsp Garlic powder
Squeeze of a Lemon
Salt & Pepper
Wash and chop up all your veggies, assembling them in the serving bowl. Sprinkle on your seeds and nuts. Add the sun-dried tomatoes. Place your dressing ingredients in a mason jar, add some water and shake. The tehina will start thickening. Continue adding small amounts of water until desired thickness is reached. Pour over (or save in a container if traveling with the salad- so it remains crunchy), mix, and enjoy!
