Eggs & Sweeties


2-3 Eggs per portion

1 Sweet potato

1 Onion

Coconut oil

1 Tbsp Dill

Salt & Pepper


Chop up your sweeties and onions in half moon pieces (coins cut in half). Boil your sweeties for about 5-10 minutes to help the cooking process. Meanwhile, drop some oil into a pan and add your onions. Sauté your onions adding in dill, salt and pepper. when onions begin to golden, drain your sweeties and add them in, cook for about 5 more minute. While those are cooking, crack your eggs into a bowl and whisk. Add salt and pepper, then add to an oiled pan and scramble them up! Unless you want an omelet or sunny side up :) Serve up on a plate when they are done! Serving suggestions: Salsa, Tehina, Ketchup, anything else! Enjoy!
