Fruit Medley


6 Dates

10 Apricots

5 Prunes

1/4 C Cranberries

1/3 C Gogi berries

1/4 C Coconut

1/4 C Flax Seeds

1/2 tsp Cinnamon

1 chunk of Ginger

Cut your dried fruit up into small pieces. Add all the dried fruit, ginger (grated with a microplane or chopped really small) & coconut into a small pot. Generously cover with water. As it's heating up add in the flax and cinnamon. The flax will thicken the mixture into a jelly. Bring to a boil. Keep adding water. The more you cook it down the more the flavors will combine. Cook for about a half hour to 40 minutes. Once you're finished, let it cool. The mixture will thicken even more once cooled.

Add this as a jelly, eat it by itself, or to your favorite veggie dish for a sweet, tangy compliment.
