GF Pesto Mac n'Cheese


Gluten Free Noodles

1 C Mushrooms

1 Onion

2 Cloves of Garlic

1 Full Cup of Fresh Basil

1/4 Olive Oil

2 tsp Nutritional Yeast

Salt & Pepper

3/4 C favorite Shredded Cheese


Prepare the noodles according to the package instructions. Begin by washing and slicing all your mushrooms and onion. When almost done slicing, bring a pan to heat with a drizzle of olive oil. When hot, place your mushrooms and onions in the pan to sautee. Continue stirring every few minutes. You want the mushrooms to shrink in size, release their liquid, and the onions to be soft. Sprinkle in salt and pepper for seasoning. Wash all your basil then place in a blender with the garlic, olive oil, nutritional yeast and about a 1/2 tsp of salt. Blend. (If you need more liquid, add more oil.) By now your noodles should be ready and hot! Place your noodles in an oven safe dish, stir in the sauted mushrooms and onions. Pour over the pesto sauce and sprinkle in the cheese. Give everything another mix and place in the oven for 20 min on 350 F or until your pasta has your desired crunch. Serve hot and enjoy!
