One Stop Pot


2 Carrots

2 Potatoes

3 Zucchinis

6 Garlic

1/2 C Red Lentils

1/2 C Black Lentils

1 C Quinoa

Salt & Pepper


Let your lentils soak in boiling water or overnight. Wash your veggies. Peel the carrots and slice them thinly. Chop the potatoes and zucchinis into small cubes. Place into a large pot. Chop up the garlic and add into the pot. Cover with water and bring to a simmer for about an hour. Drain and wash the lentils until the water runs clear. Add the lentils, Salt and pepper. Cook for another 45 minutes or until the lentils are cooked. Add more water as needed. Add a cup of quinoa into the pot and allow it to cook. Make sure there's enough water to be absorbed. Turn off when the quinoa is done and leave covered for 15 minutes. Serve and enjoy!
