3 Small Sweet Potato
1 C Wild Rice
1/2 C Peanut butter
2 Tbs Soy Sauce
1 tsp Garlic Powder
1-2 Tbsp Maple Syrup
Salt & Pepper to taste
Bake your sweet potatoes after stabbing holes into them with a fork or knife. Creating small holes allows the sweet potato to cool all the way through. Cook your wild rice with 2 cups of water. Boil until you don't see anymore water on the bottom. Simmer for a few minutes on low then turn off the flame. Leave the rice covered in the pot for another 5-10 minutes. Prep the sweet potatoes by cutting them in half and placing on a bowl or a plate. Place 2-3 scoops of wild rice onto the center.
To make your Peanut Butter Drizzle, place all your ingredients in a small bowl and mix. If the mixture is still too thick, add in tiny bits of water at a time continuing to stir until you find your desired consistence. Pour some Peanut Butter Drizzle over your sweeties and rice. Enjoy!
