Quinoa

1 Carrot

2 Zucchini

1 Onion

4 Garlic Cloves

Rinse your quinoa and put it in a pot with double the amount of water (1 Cup). Bring to a boil, cover for about 15-20 minute on low heat until the water has all been absorbed. Cut up your Veggies and roast in the oven with a drizzle of olive oil and salt. Assemble with a bed of quinoa first then the veggies, finally tehina! Want an extra boost of omega 3? Add some chia on top!
