Organic Olive Oil
1 Onion
3-5 Cloves of Garlic
1 C sliced Mushrooms
2-3 Carrots
2 Tbsp Soy Sauce
1 tsp fresh grated Ginger
1/4 tsp Cheyenne Pepper
½ tsp pepper
¼ tsp salt
Zest from one lemon
3 C vegetable stock or H2O
2 cans full fat coconut milk
¼ C cilantro
*2 green onions, sliced (optional)
*Lime wedges (optional)
In a large pot, heat olive oil over medium heat. Add onion, garlic & mushrooms. Saute 3-5 min. Add carrots, soy sauce, ginger, cayenne pepper, salt & pepper, lemon zest, vegetable stock and coconut milk. Bring to boil, simmer for 15-20 min. *Serve with lime wedges and green onion.
